Café Con Lychee Energy Bites
Organic, Vegan, Gluten Free, Dairy Free, Wheat Free, Soy Free
Servings: approximately 15-20 balls
Ingredients:
1 ½ cups who raw cashews (or almonds) soaked in water for at least 1 hour/drained
¼ cup fresh lychee juice or from bottle
1 Tbls Coffee Concentrate
1 Tbls coconut oil
¼ cup coconut flour
¼ cup protein powder-plant based, almond or whey, unflavored or vanilla
2 Tbls Honey (or agave, optional)
2 Tbls. Miniature Chocolate Chips (optional)
Method:
1. Soak your nuts for at least 1 hour to soften, drain.
2. Place the nuts in a food processor and process until crumbly texture.
3. Add the rest of the ingredients and process until it comes together in a ball. If you need to add more dry ingredients, you can start with protein and/or flour. If you need to add more liquid, add fresh lychee juice and/or lychee pulp.
4. Hand roll the mixture into 1-inch balls and place on cookie sheet.
5. Freeze your “balls”
6. Store up to 2 weeks.
