Black Sapote aka Chocolate Pudding Fruit

​Black sapote aka Diospyros nigra, is a tropical fruit native to eastern Mexico, the Caribbean, and Central America from the species of persimmon. Known as black persimmon, chocolate-fruit and chocolate pudding-fruit.

Black sapote is a tomato-like fruit with a thin and firm rind. The fruit has 2 to 10 seeds that are dark red-brown colored. Ripened black sapote has a greenish-yellow skin that is raw, inedible; pulp dark brown in color & custard-like.

The Tropical Diet® Black Sapote Bread

Ingredients:

  • 1 ripe black sapote, membranes scooped and seeded

  • 1/2 stick of Earth Balance Vegan butter, melted

  • 3 Tbls. Aquafaba (chickpea liquid)

  • 2 teaspoons vanilla extract

  • 1 teaspoon baking soda

  • 1⁄2 tsp baking powder

  • pinch of salt

  • 1 1/2 cups Bob's Red Mill all-purpose gluten free flour

  • 3/4 cup Lakanta Monkfruit Sweetener (sugar free)

  • 1⁄4 cup semi sweet mini chocolate chips (optional)

Method:

  1. Add the melted vegan butter to the black sapote and mix on low speed for 30 seconds.

  2. Add the Lakanta Monkfruit sweetener, vanilla, and aquafaba & mix for another 30 seconds until blended.

  3. In a separate bowl, sift together the Bob's Red Mill gluten free all purpose flour, baking soda, baking powder & salt.

  4. Pour dry ingredients into the mixing bowl with the black sapote & mix on low speed until just blended. Do not overmix.

  5. Pour into 2 greased mini loaf pans and bake at 350 degrees for about 1 hour.

  6. Set clock on 30 minutes, rotate loaves in oven for even baking and return for 20-30 minutes.

  7. Stick knife or toothpick into bread and if clean when removed, bread is finished!
